Mushroom Sauce (2).

TO MAKE A PINT.

Ingredients.

1 pt. of Button Mushrooms. 1 pt. of Cream. 1 1/2 oz. of Butter.

Method.

1. Take a pint of button mushrooms and prepare them as directed in the previous recipe. 2. Put them into a clean quart stewpan, with one ounce and a half of butter and one ounce of flour. 3. Mix by stirring well with a wooden spoon. 4. Add the mushrooms. 5. Season with a little salt. 6. Add one pint of cream. Boil for ten or fifteen minutes, stirring.
PRECAUTIONS.-This sauce requires almost constant stirring.
